How to make Smoky Tandoori Veggie Sandwich
Serves: 2
Ingredients:
- Embake whole wheat bread: 4 slices
- Cauliflower florets: 1/2 cup, finely chopped
- Carrot: 1 small, grated
- Capsicum: 1 small, finely diced
- Green peas: 1/4 cup, boiled
- Greek yogurt (thick): 1/4 cup
- Tandoori masala: 1 tsp
- Garlic: 2 cloves, minced
- Lemon juice: 1 tsp
- Fresh coriander: 2 tbsp, finely chopped
- Butter: 2 tbsp
For the spread:
- Hung curd: 2 tbsp
- Black salt: 1/4 tsp
Method:
Prepare the Filling:
- Mix all veggies with Greek yogurt, tandoori masala, garlic, lemon juice, coriander, and a pinch of salt. Let it marinate for 10 minutes.
- Sauté the marinated mixture lightly in a pan until the raw smell disappears, maintaining its crunchy texture.
Prepare the Sandwich:
- Butter the outer sides of each “embake whole wheat bread” slice. Spread hung curd mixed with black salt on the inner sides.
- Layer the tandoori veggie mix and close the sandwich.
Toast the Sandwich:
- Heat a grill or tawa. Toast until crisp and golden.
Pro Tip: Add a smoky flavor by placing a piece of hot charcoal in a small bowl over the veggie mix. Pour a drop of ghee on the coal, cover, and let it infuse for 2 minutes.
Serve With: Mint yogurt dip and spicy potato wedges.
